Watching with vested interest. I need to whip up some for DD2s birthday next weekend and mine are always a little underwhelming.

Hummingbird bakery cookbook. They are all fab. The secret, btw, is to use about 6 times more butter and sugar than is reasonable.

SecretNutellaFix · 10/04/2011 21:06

Up until a week ago, mine were brillinat. Since then, every single bastard attempt has sunk!

Ohforfoxsake · 10/04/2011 21:13

I find using cupcake cases in a muffin tin helps produce flat cupcakes.
Easygrip piping bags from Lakeland and I confess to using Betty Crockers chocolate fudge butter icing or vanilla.
A light sprinkling of edible glitter.
Fay Ripleys cupcake recipe is my favourite.

adelaidegirl · 11/04/2011 11:17

Agree Hummingbird bakery book is the answer! The only book I have had where every recipe works.

maighdlin · 12/04/2011 12:51

glad to hear positive reviews of the hummingbird book, just put my butterscotch pecan cheesecake in the oven Grin

going · 12/04/2011 12:55

hummingbird cupcakes never fail! Add a bit of cocoa powder to make the cakes and icing choclate.

LizaTarbucksAuntie · 12/04/2011 13:01

I use this basic method for all my 'cakes'

I cream together 6oz stork and caster sugar (really well, use food processor or electric whisk)

I add I teaspoon of vanilla extract
3 large eggs
6oz shifted flour (doesn't have to be posh stuff I use basics)

I beat that really well. if i'm doing chocolate I take out 1 tablespoon of flour and replace it with cocoa powder

Use muffin cases in a muffin tin

Bake at 180 for about 10 minutes

T's foolproof for me, but I'm crap at decorating so can't help you there.

Good luck

which one did you buy? The first one? I'm tempted but I have loads and loads of baking/cookery books and only ever look at the pictures and make myself hungry.

schroeder · 13/04/2011 18:18

would recommend this book.

I didn't have much luck with the hummingbird one at all.

Try the library and save yer pennies

Brown Eyed Baker has a great blog and these cupcakes are delicious and really easy to make.
