Thai Green Curry Paste recipe please (& storing question)

I usually make Thai green curry with a shop bought paste and thought about having ago myself as it seems easy as most recipes say blend all ingredients in a food blender. So can I have your tried & tested paste recipes please?
Also, can you make a big batch in one go and then freeze it into portions or can it keep in the fridge (shop ones can be kept for a month).

Here we go. Had this one for years. I'm afraid I dont know about freezing or storing as I've never tried!

Thai green curry

0.5 teaspoon qround cumin
0.5 teaspoon qround coriander
1 whole green chilli
3 thumb size pieces of ginger (chopped)
3 fresh lemongrass stalks chopped
4 cloves garlic
4 handfuls fresh coriander
6 salad onions
zest of 1 lime

juice of 2 limes
2 tbsp olive oil

process the above to a paste

200g fine green beans
400ml coconut milk
2 - 3 tbsp soy sauce
300g cooked prawns

Cook the beans for 30 sec then add the paste & milk, simmer for 5 minutes then add soy & prawns and cook for 1 minute

TheSkiingGardener I just tried your recipe it it truly wonderful. Simple,tasty and more importantly done in 30 mins :o Its a keeper,thank you so much for posting it

Really glad you liked it. We had it last night too! It's probably the only recipe I've had and used now for more than 10 years.

You can treat curry paste much like you treat pureed baby food-- freeze in ice cube tray then decant into a bag then defrost as required. Tip from actual Thai person (not me) Grin
