Probably stupid question about frozen stock

amberleaf · 09/04/2011 13:34

I have a container of home made frozen stock that i need to use today.

Im inpatiently waiting for it to defrost, its taking too long, can i sort of melt it in a pan or would we all die from food poisoning?

It may be a bit slushy by now so i could break it up a bit before putting it in the pan.

It will be cooked/heated for a long while as i plan to use it as a base for some soup i just need to get on with it.

So bad idea? or not?

No prob. Just make sure you heat it thoroughly, to the boiling, and preferably eat directly (cooling -reheating-cooling... is good for bacteria growth and bad for you. In the lab, they grow microbes on stock medium.)

I'd melt it in a pan.

Always forget to get it out, so just unfreeze by boiling.

cosysocks · 09/04/2011 15:32

Fine as long as you heat it so that it is piping hot.

Thanks all, its still slushy and hard in the middle so im gonna just melt it!

that reminds me i've got some turkey stock left from xmas,. what did you make with yours?

Himalaya · 03/05/2011 17:56

I knew this was going to be the question Grin
My DH worries about this too.
I think the rule is about not heating up something big from frozen, because the inside won't cook, but any thing that can be broken up as it thaws like mince, soup, stew is ok.

sarahpea I made a really nice chicken noodle soup with some left over roast chicken thighs [mine was christmas turkey stock too!], its making my mouth water thinking about it!

Himalaya Yes that makes total sense!
