Hello - I am making a lemon curd cake (victoria sponge with lemon curd in the middle) for a party on Saturday...I was going to put some whipped double cream in the centre and ice the top with icing sugar, decorated with sweets.
My question is this - if i make the actual cake on Friday, is it ok to sandwich and decorate on Saturday morning and then leave for a few hours before we need it?? It's the cream i'm worried about really - it'd be in the fridge until we need to transport and then at a picnic for a few hours before we cut it.....
or would it be best to make the whole thing the night before, in which case would the cake/cream be ok in the fridge overnight??
