Nigella has a lovely pumpkin cheese cake, but it's a bit heavy.

I generally make pumpkin cake, which is essentially the same thing.

But I've also made pumpkin and feta filo parcels, which are very tasty.

DH amused the children by pretending the pumpkin was a dead body. He made them close their eyes and remove body parts - intestines, brain, veins. They thought it was hillarious. The pumpkin ended up in the bin though! Sorry, no recipes but the laughter was worth every penny.

You can, of course, puree it and freeze it in batches to make pumpkin items throughout the year.

I've been doing pureeing and freezing already. Very practical. If you have to sieve pumpkin, you may as well do loads of it.
