INSPIRATION FAILURE.. What can I do with these veg that isn't stir-fry?

I have orange and yellow peppers, spring greens, broccoli and bits of baby corn & sugar snap peas. I feel like I should be able to make something tasty but the usual ginger / soy stir fry feels like a big bore-off.

store cupboard is pretty well-stocked.

any ideas?

Sounds like a delicious "en papillote" with some salmon to me.

Steam them very gently for a short time. Allow to cool and serve with a garlic vinaigrette as a salad?

Do you have noodles, coconut milk and some kind of curry paste? Laksa-style noodles would work well with those things. Or just do Thai-style curry with rice.

do you have any baking potatos. If so have baked spuds with a couple of different dishes made from your veg.

so broccoli and spring greens blanched and then heated through with flavoured butter a la jamie

roasted or stewed peppers

warm salad with sugar snap peas and bacon etc.
