What's your fastest, easiest, hassle-free cake?

What is the cake you make when you have got loads of other things to do and need to make something but it has to be quick and easy? And preferably doesn't use every bowl and utensil in the house? But is also yummy?

I need to find something like this- although reading my list of requirements I'm not sure such a cake exists!

Banana loaf. You can make this in a loaf tin or as individual muffins. I just bung everything into the mixer and add the bananas at the end. I often use up bananas that are getting a bit soft.

You can add choc chips or caramel chips to make extra yummy.

Banana Loaf

2oz butter
5oz caster sugar
2 medium eggs
3 ripe bananas, mashed.
8oz self-raising flour
1tsp vanilla essence
A pinch of salt
Method
Preheat the oven to 170C.

Grease and line a small loaf tin with greaseproof paper.

Cream together the butter and margarine until pale and fluffy using a mixer.

Bung in the eggs, mix till soft and fluffy

Fold the sifted flour and salt into the mixture, then fold in the bananas carefully.

Bake in centre of the oven for 45-55 minutes until golden and a knife will come out clean when tested.

the 20 minute lemon tartlets:

buy ready made graham cracker shells (6 individul or 1 big)

Mix
-1 tin sweet condensed milk
-4 egg yolks

  • juice and grated zest of 4 limes

Fill shells and bake 15mn at 180 degrees (preheat 10mn)

dust with icing sugar mixed with a grated lemon zest

chocolate fondant

-chop 150g dark unsweetened chocolat + 100g butter and melt in microwave

  • add 4 egg yolks + 3 medium heaped tbsp flour + 1 cup sugar
  • fold in beaten egg whites

(you can add chopped nuts to make it into a brownie)

bake 20-25mn at 160 degrees

Thanks all, they sound yummy and easy too. I have used Marslady's LD cake recipe before and it is fab. Love the sound of the choc fondant although it does sound worryingly easy!

Fat free All Bran loaf:

1 mug of all bran
1 mug of milk (skimmed for fat free)
1 mug of sultanas
1 mug sugar

Mix all the above in a bowl & leave to soak for an hour or up to 2 days.

Add 1 mug of SR flour & mix.

Scrape into a 2lb lined loaf tin & bake at 180c for about 90 minutes.

Actually a whole mug of sugar is a bit too sweet so you can reduce this - I only use about half a mug now. Ring the changes by varying the dried fruit & adding mixed spice or cinnamon - whatever takes your fancy really. I have also shoved in any sad looking fruit from the fruit bowl from time to time - chopped apple or mashed banana for example. It is nice for breakfast and freezes well.

Very easy to do.

A vicky sandwich, surely! I chuck everything in the bowl at the same time, mix and pop in the oven. Although I do sometimes panic that I've got it in the oven with such speed, whether I remembered all the ingredients!

I either put jam in the middle or if I'm feeling decadant, I make a chocolate ganache.

Yogurt cake:

1 5oz carton of yogurt

Then use the empty carton to measure:
2 cartons of sugar
1 carton sunflower oil
3 cartons SR flour

Mix all of the above with 3 eggs to make a fairly loose batter. Scrape into a 2lb loaf tin & bake for 1-1.5 hours at 150c.

Variations - add any of the following:

dried fruit, chocolate chips, chopped glace cherries, orange juice & zest, lemon juice & zest.
