Sunday Roast carried on to Monday .... no cooking only ding ding

I've started making enough on Sunday to have a reheated roast on Monday...what a god send only have to microwave...instant meal! I used to frown at this but its wonderful, yes the roasties are soft but a few a boiled new spuds make a super dinner.

I think its much more ecomoncial too, I usually end up thinking what to do with the left overs on on numerous occassions its gone too dry or off to bother.

Monday used to be meat free but that will have to be another day now!

Eat and washed up by 7pm binking marvo!

I do this all the time, it's fab. Not so much with roasts but any casseroles, bolognese, curry etc either gets frozen or we have it two nights running. The more eating out of one day's cooking the better I say! :)

We always manage to get at least two, sometimes three, more meals out of our leftover roast chicken or lamb. DH tends to buy a large lamb or chicken and I make curries and stews with the leftovers that often last us through to Wednesday for two of us. DH will often use chicken in sandwiches too.

I used to try and do this, unfortunately my greedy family usually eat up all of the roast leaving none for economical shepherd's pie so I sometimes cook a smaller roast to try and keep the cost down! Grin

If you put the roast potatoes in the oven for 5/10 mins then they come out nice and crispy!

Or will that be too much effort? Grin

i always plate an extra 2 up as we dish up (minus the gravy) and put them in the fridge clingfilmed. DH has one at lunch at work (takes gravy separately) and DS has one for tea on Monday night.
( I not being super keen on roast may i burn in hell! and only cook it for them really, have something else!)

Oh, yes, usually manage to make the roast last 2-3 days. Even better for tired evenings - dish up a little roast dinner, complete with gravy, into food container. Freeze. Nuke for instant comfort.
