I have some beautiful lamb chops for tonight, what shall I do with them

I don't want to just grill them and have them with mint sauce and mash, I want to do something else with them but i'm unsure as to what

They are the gorgeously expensive ones without a bone in

I would do this:

marinate in yoghart, cumin, garam masala, lemon juice garlic and ginger and bake in oven

or

Pan fry and serve with a lovely red currant jus

Marinate in olive oil, lemon juice that has some saffron in it and crushed garlic. Griddle or pan fry (please don't grill, grilling meat is pants imho) and serve with rice or cous cous and grilled/griddled veg. I mix my veg into my couscous or it's a bit too much like dust ;-)

Stab slits into them and pop in small slivers of garlic and springs of rosemary. Plenty of sea salt and black pepper and roast hot for about 10 mins then rest in foil for lovely tender, medium rare finish (more if you want it more well done but it's low fat so be careful not to crucify it)
