What to do with lots and lots of potatoes?

I'm a member of a community sponsored agriculture farm and so we get a share of the produce every week. The last few weeks we have been deluged with potatoes! Any advice? I'm starting to get overwhelmed.

Potato and onion and parsnip soup - equal weights of each, add stock, milk and seasoning appropriately, top with slices of fried saucisson... yum!

A nice easy meal, cut 4 or so potatoes in evenly sized pieces and fry in a skillet with some nice oil, add chopped onions and red pepper to the pan after you have turned the potatoes over once. Keep turning until they are all cooked through and nice and brown, add a bit of salt and HP sauce if you like to the mix. In a separate bowl beat about 6 large eggs, pour the egg mixture into the potato mixture and cook until done. Delish!

potato dauphinoise (layered with cream and garlic and baked - yum)
potato wedges
make your own oven chips - blanch, oil and freeze
jacket potatoes
