please may I have your favourite vegetarian lasagne recipes please?

I do a puy lentil one if you want it? It has puy lentils and copious amounts of port or red wine in it!

Okay -

Fry a couple of onions cut into small chunks rather than slices, or a few shallots, plus some crushed garlic. I usually chuck a few carrots cut into chunky slices on the diagonal in too. Fry it until just beginning to colour.

Add lots of fresh rosemary, black pepper, a teaspoon of honey and a teaspoon of grainy mustard. Other herbs too if wished. Add a big glug of port and some boiling water, then about half a packet of puy lentils. Shove in the oven for 40 minutes or so, checking if it needs more liquid or port/wine.

Then add some chopped red pepper and some salt, more pepper and herbs if needed.

Use instead of the meat layer.

Spinach & ricotta? Fry onion & lots of garlic til soft. Add fresh baby spinach (cut it a little first). Wilt into onions & garlic or you can just add defrosted spinach - just try to squeeze some of the water out first. Leave to cool. Add to ricotta, loads of grated parmesan & creme fraiche. Season with salt, pepper & nutmeg. Then layer with pasta & bechamel or pasta, bechamel and tomato sauce (onion, garlic, tinned toms, oregano cooked down). Finish with layer of bechamel and top with parmesan. Bake @ 180 til golden and cooked through.
