I need a pudding recipe that is smart enough for having guests, but can be eaten the next day after a family roast.

We have invited a couple of people over this evening, bit last minute, but our weekend plans fell through.

Not sure if anyone will come, could be just DH and myself, one other or 5/6 of us in total.

DH is cooking the main and starter (prawncakes with sweet chilli dipping sauce for starter, chicken breasts stuffed with cheese and wrapped in bacon, herby roast potatoes and broccoli for main) All of which can be put together later on, when we know how many of us there will be.

But what can i do for pudding? I want something that is posh enough incase we do have people over, but if not, it can be kept to take to my grandparents tomorrow (was going to do rhubarb crumble)

dizzydixies white chocolate cheesecake with some red berries/blueberries on top for decoration

I would do the crumble and get a packet of good quality ice cream in the freezer to serve with the crumble to make it go further.

Keylime pie. So easy. Just go to carnation web site. I swear by it for guests and always gets fantastic comments.

Mmm...

Posh rhubarb pudding:

cut lovely pink rhubarb into 4 inch sticks, lay out neatly in a dish. Sprinkle with sugar, sprinkle with orange juice, the insides of a vanilla pod if you have one. Bake slowly till cooked but not falling apart.

Make shortbread biscuits with good butter.

Make posh chocolate sauce with some 70% choc and a little cream.

Dinner party version: individual stack and drizzle arrangements on White plates

Family version: put rhubarb, biscuits and jug of sauce on table and help selves.

I did see a rhubarb and strawberry crumble that looked pretty good, and we have some Waitrose clotted cream ice-cream in the freezer...

I do love fool - so you could use any extra rhurbarb to make fool to take to grandmas on Sunday and serve with shortbread biscuits

The lazy part of me is really thinking of just making 2 crumbles, then can freeze one if need be. DD(3yrs) keeps asking for rhubarb crumble. Hmmmm...

I don't think you can freeze cooked biscuits - you can freeze the raw dough and then cook later.
