what can i do to spice up my rice?

not litterally 'spice' it up anything really to make it more intersting rather than plain boiled

A pinch of saffron gives it a lovely yellow colour and a special fragrance. If you dry roast (heat in a dry frying pan until toasted) some cumin seeds, coriander seeds with some peppercorns and chilli flakes and add those to the cooking water, that livens things up a little. Stirring in a small knob of butter and some chopped parsley to the rice after it has been drained gives it a rather lush feel. Brown rice is a lot tastier than white. And Waitrose do a nice three rice mixture .. brown, red and wild... which is lovely enough to eat on its own. :)

I made mexican style rice last weekend:
mix 1 cup of rice with 1 tablespoon of Tomatoe puree, 1 glove of garlic, 1 teaspoon of stock powder, a little paprika. add 2 cups of water and bring to the boil, switch off the stove and let sit for 15-20 min until all liquid is absorbed. don't lift the lid until finished.

also nice: just cook plain rice and when finished add a tablespoon of creme fraiche and a few chopped tomatoes.

or: mix 1 cup of rice with a handfull of dried tomatoes and a little salt. add 2 cups of water and cook as above (with the lid closed until all water is absorbed)

cooking it in stock and with a bit of onion makes it more tastey.

I sometimes dab some food colouring (on cocktail sticks) into cooked rice -so that some grains are different colours - to make it like Indian restaraunt rice - the DC really like it as it looks so pretty.

Adding some noodles and/or lentils with some cinnamon to the rice and topping with some slow fried onions is good too.

Advieh spices (iranian) added at the end is lovely too (seasoned pioneers ell it , but the site gives the ingredients so you can do it yourself)cinnamon,allspice,rose petals.
