Easy recipe for crispy pork with left over roast?

I have fresh noodles, I was thinking something along the lines of leftovers done in oven somehow then shredded and added to noodles and veg?

Ummm, anyone?

For 'crispy', if the pork is already cooked then you might be better off shredding it into strips, coating it in a simple tempura batter of cornflour, salt and ice-water, and deep frying until crisp in a couple of inches of oil in a wok. Re-roasting already cooked meat could just make it dry.

Reserve the crispy pork, empty out the wok, stir-fry a selection of vegetables, add some cooked egg noodles, a sweet & sour sauce and finally your crispy pork shreds and some shredded spring onion.

Hugh F W does one mixed with fennel and potatoes. Sounds and looks wonderful.
