I need to use up:

Green beans
Orange and yellow capsicums
Courgettes
Baby carrots

I have cupboards groaning with ingredients; pulses, tins, herbs, spices. Also have things like onion, ginger, garlic, fresh herbs etc.

Meal must be vegan. Will prob serve with rice.

I have lost my cooking mojo and am fed up with the same old same old. How would you cook the above?

Grill or roast peppers and courgettes, then serve with balsamic dressing and pine nuts (I would have feta too but I'm not vegan).

Green beans in a salad with walnuts and apple.

Umm, carrots on their own, they're too nice to faff around with.

Or you could make a thai curry type thing.

Ahh, the only thing I don't have is coconut milk so Thai is out.

Ratatouille - maybe. But am doing tagine of root veg tomorrow and it might be a bit similar.

Oooh - how about stir fry with noodles?! That could be nice.

Lentils, soy/rice milk, onion,lemon juice and rind,s&p, courgettes and peppers, any other veg care to add.
Cook lentils, seperately cook onions add to lentils, with lemon and seasoning. liquidise (might need to add a little vegan stock to loosen.Should be smooth thick puree. Fry/steam veg you are using till just tender place in shallow casserole top with lentil puree,cover with appropriate breadcrumbs and cheese bake 40-45 mins.

Or stuffed peppers/courgettes?

Or (my preferred option probably) soup?

Thanks for all suggestions.

I have decided on stir fry and chopped everything accordingly.

How do you do stir fry? Mine are often a bit stodgey and bland Blush
