I've got baking potatoes and leftover chicken. What sauce should I make?

Seems a bit dry on it's own. I've got a tin of sweetcorn in the cupboard too. Anyone feel like inspiring me?

Cream cheese (eg Philadelphia) and a spoonful of pesto. Heat up with chicken. Then also obviates need for butter on baked potatoes.

Cook corn, in another pan fry some onions, garlic and mushrooms, chuck in some thyme, mix all together with the corn, good dollop of Philli. Warm through the chicken in some stock. Mix that in with the rest.

Fry an onion. Dollop some creme fraise/plain yoghurt/cream in the pan. Melt in a chicken stock cube. Simmer for a few mins. Throw in your sweetcorn. Put in a dish. Place parboiled potatoes on top. Bake until top is brown.

Hmm, no philadelphia in the house but must remember that idea. Think I've got some double cream needing used up so could try joni's suggestion. Thanks everyone.

Use the cream and throw in a good handful or two of grated cheddar.

Fried a shallot then added mushrooms, the tin of sweetcorn, the chicken, a teaspoon of wholegrain mustard and the cream. Served with baked potatoes and salad. Was very nice but DS wouldn't touch it cos he decided that he now hates sweetcorn. I only put the damn stuff in because he wolfed some last week. Never mind. Thanks again.

I have a favourite sauce which is a mix of lemon juice, dab of soy sauce, honey, dijon mustard, garlic, herbs, s+p which I mix up, put the chicken in a foil wrap built up so the juice doesn't drip out, close up and bake at 180 for 35 mins. Serve with potatoes (even baking potatoes can be chopped and roasted with some rosemary, oil and salt or something) and green beans or some green veg, even peas. always yummy and a hit with everyone I have made it for!
