I have mixed results with these BBC Good Food recipes, but this one worked brilliantly so I thought I would share, just in case anyone else is having a 'making a cake for a coeliac' dilemma.
Orange and Almond Cake
A word of warning - this recipe seems to make waaay too much batter ? I had enough for two cakes! You could halve the quantities. It doesn?t seem to rise much so you could even bake it in a sandwich tin.
I added a bit more Contreaiu than it suggested for a bit of a boozy kick. I just frosted the cake with the mascarpone to take it to my friend's house in a tin, but if I was going to serve this as a dessert at a posh dinner party, I would probably reserve and strain the liquid from the orange-boiling and add caster sugar to make a syrup to drizzle on the plate. You could also add a bit more orange zest or candy some fine strips of peel for decoration.
