WHy do my fairycake shrink away from the papers

They look OK when they come out of the oven and they taste good, but when I come to decorate them they've always shrunk and the papers are peeling away. What am I doing wrong?

I thought they were meant to do that. Cakes always get a little smaller once out of the oven - at least, the big cakes do. So no reason why little cakes shouldn't.

If it's shrinking a lot, maybe you are over cooking the cakes. Try taking them out a couple of minutes earlier than usual.

There are a few forums on this if you search google. Its a common problem with bakers.

Some say to remove cakes out of tin the minute you take them out of the oven. Other say to pour a hot sugar & water mix around the edges to secure paper to cake.

I find its worse with the posh shiney papers against the cheaper everyday cases.
