I really fancy an omelette, but I don't have much to put in it

Can anyone suggest anything? Kicking myself for not buying bacon earlier!

I can't eat cheese as I'm allergic to it.

I have potatoes, onions, garlic, various herbs... then I'm stuck. Various things in tins, in the freezer, etc - does anyone know of anything unusual I could put in one which I might have lurking in a cupboard?

Don't have a microwave BTW so can't defrost anything quickly. Although annoyingly, I do have some chicken in the freezer which would have been quite nice I suspect. Could I defrost it in a bowl of warm water if I dispose of the water very carefully to avoid splashing?

wouldn't put chicken in an omelette.

Fry up some spuds and onions though and you've got the basics for a spanish omelette - nice.

I had to have a jacket potato with baked beans ...

Yeah I don't want a plain one - might as well just have a fried egg Grin

I've had chicken in omelettes before - usually left over roast chicken, it's okay. Bacon or sausage is better!

I never thought of it like that, Cyb. Oh well. It's only what would have fed the chick - chicken and sweetcorn goes well together and don't adult chickens eat corn?

Baked beans sounds... interesting. How does that work?

What did you do in the end? I would just do Spanish omelette with onions, potatoes & herbs which is fine.

I defrosted the chicken in the oven in a little roasting dish with some garlic, butter and herbs and then fried it up (though was already cooked through - just to make sure) with par-boiled potatoes and the onions.

I ended up with too much filling and too little egg so it all fell apart but it tasted nice Grin

Yes, I would imagine with chicken AND herbs AND potatoes AND onions it would be a bit too much. But delicious I'm sure :)

I do like plain omelettes, myself, to be honest, even completely plain is fine.

onion, chilli, herbs, then when its done put it in a tortilla with brown sauce roll it up and eat it. Yum

Its a Nigella recipe actually...still yum though
