So I've got a whole chicken roasting in the oven but can't be bothered to do the usual roast veg. What now?

How about doing jackets instead of roast pots etc, and then other veg and gravy as normal?
We do this a fair bit, especially with chicken because it takes the work out of preparation and clearing up.

And I love jacket potatoes Grin

Ah Alibaba I think I love you. Can just about muster up the energy to throw spuds in the microwave.
I'm sooooooo lazy today.

On the upside it means dh's chicken noodle soup tomorrow!

Boiled rice instead of potatoes and broccoli, carrots or whatever you've got in for boiled veg. Quick and easy. Make plenty of gravy and pour liberally over the lot! yumm.

I'd have it in deli wraps with salad, and maybe some chips or wedges on the side.

A fairly simple pilaff is yummy.

Couscous and a quick stew of onions, tomato, chilli and chickpeas or butter beans.

New potatoes, green beans

Put the jackets in the oven once you've softened them in microwave - you might as well as the oven's on plus they go all caramelly (if that's not a wiord it should be lol) tasting as well as crispy. It's our alternative to roasties and we prefer them.

I like bulghur with roast chicken - I add plumped sultanas, roast pinenut kernels and pistachio kernels, podded broad beans and lots of caramelised onions.

Salad, new potatoes and salad cream! Bloody lovely. Mmmm...roast chicken and salad cream.
And you have to roast the chicken with butter, lemon, tarragon and thyme under the skin...yummy yummy yummy.
Uh oh, who got the pregnant woman talking about roast chicken? Grin
