Nigella cherry almond loaf - what went wrong?

Tried Nigella's cherry almond loaf receipe. Checked it after 3/4 hour and skewer not clean so returned it to the oven for another 20 mins. Skewer came out clean in the centre of the loaf and left it in the tin on the rack to cook as instructed. Came back to it later to find a crack down the centre of the loaf and under the crust it had sunk and was clearly not cooked through.

So despite being in the oven longer than requested, and the skewer coming out clean, it was nowhere near cooked. Any ideas where I went wrong?

You have to cook it for twice as long as she says. I do it frequently myself, and sucessfully if I put it in for twice as long. Her timings are crap.

If the top is starting to go too brown, though, cover it loosely in foil. The centre will still continue to cook through without the top burning

I too have had the same problem with this cake, and found that it's fine if cooked for longer.

Never trust a Nigella recipe.

Followed your tips and it worked much better. Not sure whether it'll make it to my regular bakes though. Thanks everyone.
