Have most of a shoulder of lamb leftover

Ideas for recipes? I've never really cooked with leftovers apart from stir frys and sandwiches so all suggestions gratefully received.

Curry.

Lamb isn't as nice reheated but very good in a curry.

Hotpot - really simple .
Break the meat up into chunks
Cut up 1-2 onions into thick slices
Cut 1-2 carrots into chunks
Throw it all into a large ovenproof dish, season well and add stock /thin gravy to almost cover.
Then layer lots of thinly sliced potatoes over the top.
Cook in a low oven for 1.5.-2hrs, uncovering for the las 3-0-40mins.

MIL uses leftover roast lamb in a shepards pie. She whizzes it in a food processor to chop it up and then sweats off onion, carrots and then adds the lamb and stock cube, water etc. Just uses it basically as mince but cooks for less long and then tops with mash. Tasted very nice.

Ooh, all good ideas. Hadn't thought of sixfold it up to mince it, might have to ask DH which he fancies most. Anyone have a good lamb curry recipe? I'm a bit of a novice on cooking Indian food.
