I have just made muffins and have 2 cartons of buttermilk to use up. I can't be bothered to bake anything fussy, any ideas to use them up?

Nigella's chicken nuggets: soak chopped strips of chicken breast in buttermilk for ?? forgotten how long sorry....then roll in ritz cracker crumbs and bake in oven!! V. good!

IIRC scones are best made with buttermilk. No idea where I remember that from, will check.

Sweet scones here. Ignore all the raspberry butter stuff. Cheese ones are always nice too.

Wont use it all up unless you make loads, but they freeze vary well.

oh yes, scones :) I also use buttermilk to make soda bread.
