What would you do with a couple of over-cooked chicken breasts?

I had some chicken breasts that wwere on their use-by date, so I cooked them all. Usually microwaved chicken comes out really nice, like poached chicken, and is lovely cold. But I overdid these, and, while they were OK hot, they're tough cold.

So, how can I use them up?

i'd chuck them. life is too short

cut into small pieces and use in soup.

I would do as Mousy says, or, I would mix them with an onion, barbecue sauce and a bit of water and cook in a low oven until they were completely disintegrating. Then shred them between 2 forks and use inside crusty rolls.

Slice them fairly thinly, steam them and add to a tomato based sauce with pasta.

Thanks for suggestions. Turned them into tomato-based pasta sauce with chopped olives. Dc eating it right now. Amazing how far it's stretched - there's plenty for dh and me later.

Excellent padding you-know-where, I'd have thought.

Nice and warm, too.
