If I add double cream to a hot dish will it curdle?

I don't have creme fraiche so am subsituting double cream in a hot dish. Will it curdle though when I add it, or should I cool the dish, add the cream and then heat gently? TIA.

No you can add double cream, just keep the dish on a very low heat & stir continuously. I've added double cream to many cooked dishes & it's fine.

Yes I agree - that's what I was going to say Maria - relatively low heat and keep stirring and should be fine.

If you take it off the heat whilst adding the cream it won't curdle.
