How do I make a gravy from chicken stock when I'm not roasting meat?

I am making a chicken stock from yesterdays chicken carcass, how do I turn this into a gravy to pour over the bubble and squeak I am making?

iirc my mum used to melt butter, add flour to form a paste and then gradually at the stock.
