A family friendly meal with chicken breasts?

I know it's not complicated to make a meal with chicken breasts, but just wondering what other people do? Thanks.

My DC's favourite is parmesan chicken. Cut chicken widthways so very thin escalopes. Get three bowls. In one, beat an egg. In the next, shove in some flour. In the third, mix some fine breadcrumbs with parmesan, celery salt and a pinch of cayenne.

Coat escalopes first in flour, then egg, then breadcrumb mix. Fry in olive oil a few mins each side. Serve with broccoli and carrots.

They also like a noodle-y stir fry sometimes. They are both mad for hoisin. I use sugar snaps, peppers and carrot batons.

Mine love a stir fry too. Chicken pie is also child friendly. Just sautee the chicken in pieces with whatever veg you have (onions, mushrooms, leeks all work well), add garlic, seasoning, flour and stock til you have a nice consistancy, any herbs you fancy - thyme, tarragon, parsley. Pop into a dish and put a shop bought puff pastry lid on. We also like a lot of chunky soups in the week. Bulk them up with pulses or dumplings. And the kids love to make fajitas. Quesadillas are easy, child friendly food too.

second both previous options - i sometimes use polenta instead of breadcrumbs and asparagus soup as the liquid base for a pie

or grill breasts with ham and cheese on top and maybe srprinkling of tarragon
