the other day I made some chocolate buns and lemon and poppyseed cake with vanilla cream filling.

and they were ace.

just wanted to boast

dh actually said they were the best he's ever had. and normally he gets about as gushy as: "its alright"

cream 5oz butter and 5oz caster sugar until very light.

add 5oz SR flour and tsp baking powder.

while mixing these slowly add 2 eggs beaten with a drop of vanilla.

*for lemon and poppyseed add 2dessert spoons of lemon juice and zest of half a lemon (or to taste) and a dessert spoon or so of poppyseed.

put into 2 greased victoria sponge tins and cook at 180 til cooked through. when cooled whisk up 1/2 cup cream with vanilla and put between cakes (lemon curd would work with it too) top with buttercream icing and decorate with whatever (i used orange and lemon sweeties)

*for chocolate add 1 oz cocoa powder and pinch of salt and a slog of milk, divide between 12 bun cases in muffin tins and bake at 180 til cooked through. used buttercream vanilla icing to top.
