I need to made a gluten free, vegetarian pudding. Any ideas?

We're going to the IL's this weekend for a family get together. BIL has coeliacs and SIL is veggie.

I rashly offered to make a pudding and now I can't think of what to make - help!

Crumble, use oats instead of four, delicious.

I've got a fabulous recipe for chocolate fondants.

190g dark choc (70% cocoa solids)
100g butter
35g ground almonds
2 large free range eggs, separated
35g cornflour
85g caster sugar
6 good quality choc truffles

Oven to 180' C; 160' C fan; gas 4

6 ramekins or similar - grease with a little of the butter and then grate 40g of the choc finely and dust the insides with it. Keep the excess and melt together with the rest of the choc and the butter in a bowl over hot water.

Beat melted mixture together with almonds, egg yolks and cornflour.

In another bowl whisk the egg whites until they form stiff but not dry peaks and then gradually beat in the caster sugar. Fold this meringue mixture into the choc mixture.

Put half the mixture into the bottom of the ramekins. Place a truffle in each one and then cover over with the rest of the mixture. Put ramekins on a baking tray and cook for 10-12 minutes.

Turn out onto plates and serve warm with cream.

Crumble is a good bet, but some coeliacs are also oat intolerant. I've made a decent crumble with gluten free flour.

I was thinking pavlova too - just miss out the cornflour and make it a crunchy one.

What would you make normally ?

GF puddings are really easy tbh - a lovely chocolate almond torte would be fab. Pavlova is a bit inevitable as a coeliac, so although nice, I'd avoid it
