What can I do with a Brie mountain? Something I can freeze ideally!

I have a whole Brie and 3 small peices which make up another half and I know if I don't actually do something with it, it will just go off in the fridge.

Other than having a cheese and wine party, which I will not do as am off entertaining for at least another 11 and a half months, what can I do with it?

You might be okay to just freeze the brie itself. Chop it into chunks and clingfilm it first.

Could you make up some quiche with brie and ham in it maybe and freeze? Pretty sure that's what my friend does to dispose of xmas cheese mountain

I would freeze it and then use it for cooking on defrosting.

Yes you can freeze it no problem, just make sure it is ripe enough before freezing as it won't mature further when you defrost it.

yes, I have frozen brie (and lots of other cheeses) - the texture isn't quite the same once defrosted, but near enough!

freeze it in slices for sarnie....toasty ones

brie and mango chutney is amazing in a panini or use cranberry and a croissant :D YUM!

Thanks guys - DH already chomped through half a kilo of other cheeses and he is supposed to be shedding a few pounds - at least can ration it if it in slices or pieces!

Was at a party the other day where a whole brie was served up baked in the oven as a sort of hot fonduey type dip, with crackers.

Was very nice

Last night I used up all the leftover bits of cheese (blue, soft, hard - all of it) and made a fondue using beer as a base. Twas lush, with salad & crusty bread but couldn't be frozen I imagine.

Brie freezes beautifully... I always bring at last 6 whole ones back from France. Cut into quarters and wrap in cling film, then stack them up one corner of my chest freezer.
