Vegetarian lentil & blue cheese flan recipe wanted

A long time ago a friend made a lovel flan with lentils and blue cheese. I can't remember what else was in it, but it was on a pastry base (possibly wholemeal) and I don't remember it containing any eggs.

Does anyone have such a recipe? It was absolutely delicious, but I'm no longer in touch with her and have never been able to find anything similar .

I have googled and even tried inventing, but no success to date .

I'm considering trying adapting this by using puy lentils (and cooking for 45 mins not 20), substituting for blue cheese and a wholemeal pastry recipe and then leaving the top off. It'd need a bit of the cheese sprinkled across the top.

Still not sure it's what I was looking for though, so other suggestions v welcome .

Hmm - that sound interesting. I don't eat egg so I'd leave that out - which will make it more soupy and less quiche like I guess.

Can you describe the texture/colour of your friends one?

The lentil part is easy - adding the blue cheese, simple enough... so what is it about that, that isnt' right? It sounds odd like that, but I'm not sure which direction to head in

Oh no, I'd not spotted the egg . That's not right then! I honestly can't remember what made it so good, that's the problem. Maybe I'll try cooking up some puy lentils with some chopped onions and a bit of celery, stock, & spinach until I get a nice thick filling. Then stir in a few handfuls of walnuts, put the whole lot in a blind baked wholemeal pastry case and sprinkly blue cheese across the top before baking. Would that even work? Would the filling dry out and be rank or make the pastry soggy? Guess I'll have to experiment once I've made it to a supermarket again .

The upside down thing does look nice, but the one I had definitely didn't have squash.

I think you need something to break up the lentils a bit or it will be a bit samey - maybe chunks of potato, mushroom, squash etc? I think it would cook OK though.

I wouldn't put walnuts in it though - but only because I think they are the work of the devil!!
