Can anybody help? Need a nice simple recipe using store-cupboardish ingredients. Nothing too fancy or time consuming.

Thanks, in advance.

It depends entirely what you have in your store cupboard!

I would do this:

Chop a large onion and finely chop 2-4 cloves of garlic.

If you have any ginger, peel and finely chop that, as well as a chilli.

Fry the onion gently in veg/sunflower oil, with the garlic, ginger and chilli. Add any/all of the following - ground cumin/coriander/turmeric and a couple of cardomom pods. If you haven't got any of those spices, use some curry powder instead, and any dried herbs that you have/like.

Season with salt and pepper.

Fry for a couple of minutes then add in your turkey, along with whatever veg you have. Chuck in any leftover gravy or some water with a stock cube. If you like a tomatoey curry, chuck in a tin of tomatoes.

Then cover and simmer for about 20 minutes.

The juice of a lemon also works well, and if you have cream/yoghurt and fresh coriander, these are nice added at the end.

Thanks Santa. Just the job!
