Lambingtons! Chocolately coconutty cakey goodness! Never tried them before, they're lovely.

I had the only bakery in Tokyo that made Lamingtons at the end of my street - all my expat Aussie friends were very jealous. Of course, they were miniaturised versions, about a quarter of the size of a proper lamington, but still delicious....

Unfortunately both DCs hate coconut, or I would have a go at making some at home. There's a good recipe from Possum Magic here.

Then try them split, with double cream in the middle yumyumyum.

in New Zealand we do two kinds of lamingtons: chocolate and raspberry. Definitely have fresh whipped cream in the middle :)
