Gammon cooking times - Delia v. Gordon!

I have a gammon that is 2.6k

Gordon Ramsay says to boil at 2k gammon for 2 and a half hours.

Delia says boil a gammon for 25 mins per lb - which would work out for ours at 2 hours 20 mins. - Surely much less time for a bigger joint.

Not sure what to go with, as I always trust my Delia bible normally.

Any suggestions?

Do either of them include roasting time at the end? That could boost total cooking time, IYSWIM.

We did 2 kg for 2 hrs and then 15 mins in the oven and it was perfect (Nigella). So maybe split the difference. NB that it depends whether you're starting from fridge or room temperature.

I don't think it matters too much with boiling because it's not going to dry out. I'm sure Delia's time would be fine.

With Gordon's you roast for 50 mins total after boiling. Seems like a lot of cooking!

With Delia's it doesn't really say (am looking at the complete cookery course) - think an extra 30 mins looking at the baked whole gammon recipe.

If it doesn'treally make too much difference think I'll go with Delia's cooking time.
