I'm doing Nadine Abensur's Mushroom Wellington and want to do the creamy mushroom and chive sauce to go with it. Does anyone have the recipe please?

That was good timing - am just about to go to bed!

Right - I'd fry a very finely chopped shallot and a garlic clove or two in some butter - not to colour, just to soften. I'd then add some sliced mushrooms and fry. Then I'd add a slug of brandy or white wine and cook it off. Then either a tub of creme fraiche or a tub of double cream and heat through, splash of milk if too thick; lots of black pepper; chopped fresh chives.

Poss a little fresh lemon juice - to stop it being too rich, but not so much that it splits.
