Scottish MNetters - Can I have your best recipe for STOVIES?

Since my Roast Beef was such a disaster yesterday, and I have half a roast left over. I think it would taste ok in Stovies.

I've only made it once, but it was delicious. I am sure there are many variations, but this was how my mum said to do it.

Fry a large onion.
Add a heap of thinly sliced potatoes.
And your roast beef - shredded finely.
Pour in about 0.3l beef stock (I used oxo)
Lower the heat as far as it will go.
Leave it for about 1.5hrs.

I stirred mine once or twice (though she told me not to). If you can bear to leave it, you get a fab crispy crust on the bottom.

I'm sure there are a million different ways to do it. I've even heard of it being made with mince, or corned beef!

Fingers crossed, hopefully someone will have better instructions soon.

Thanks, that sounds good.

Could I bung it in the oven on a low heat then? My stove does not work well at low heat - it does not go down low enough.

Too late now I am sure, but yes. I think the first attempt I had - before DMs intervention was done in a le creuset in the oven. I seem to remember it was lovely, just not "authentic" according to my mother!
