How long does gingerbread biscuit dough last for in the fridge and can you freeze it?

It has to be chilled for 3 hours before use and I didn't realise and now it's going to be too late to do anything with today as we're busy this afternoon and evening. How long will it last for in the fridge and can i freeze some of it to be done another time?

Also - can I freeze the biscuits? Before or after cooking?

You don't really need to chill for 3hrs. You could cut it in half and chill for a shorter period of time. It's just to make it firm so it's easier to roll.

It should keep for a couple of days in the fridge. And you should be able to freeze it. I would freeze before baking, either as a lump or cut into biscuit shapes.

If the dough is easy to roll straight away and you have space in the fridge, you can roll and cut the shapes and chill them on the tray for 10-15 minutes before baking. Then you can continue to roll more during chilling to make the most of your time
