110g unsalted butter
180g caster sugar
2 lg eggs
125g SR flour
120g Plain flour
125ml milk
1.2 tsp amaretti liqueur
syrup:
125g caster sugar
125ml water
1/2 tsp booze
icing:
115g unsalted butter
60ml milk
1tsp vanilla extract
500g icing sugar
1/4 tsp amaretto
preheat to 180
cream sugar and butter, beat for 5 mins. Add eggs one at a time and whisk til pale and smooth. Combine 2 flours in separate bowl. Add liqueur to milk. Add 1/3 flour to sugar and butter mixture, then 1/3 of the milk and beat well. Repeat til all flour and milk used up.
Spoon mixture into cupcake cases until 2/3 full. Bake for aprox 25 mins.
Combine syrup ingredients and microwave for a few seconds until sugar is melted. Wait til cakes have cooled for 10 mins, then dip the tops in teh syrup for a few seconds. LEave to cool completely.
Make icing and ice cakes. You can sprinkle with some crushed amaretti biscuits if you like.
