How can I make a chocolate cake that is not two cakes sandwiched together?

DS1's birthday tomorrow. He is v fussy and doesn't like jam and probably doesn't like chocolate ganache, buttercream icing or anything else you use to sandwich two sponges together.

so I need to make him a very un-fancy choc cake in only one layer. Can I just do a bigger sponge or won't it rise properly?

(I don't normally pander to fussiness, but you know, for his birthday I think I ought to Grin)

I use a 24 cm tall tin, and the cake comes out at 5 cm tall. I usually cut this in three, and put filling in..... Cooks for 50 minutes on gasmark 4

Yes you can do a normal sponge. Just cook it for longer.

Make a fudge brownie cake and serve with ice cream?

225 gm butter
225gm chocolate
4 eggs
225gm sugar
110gm flour
Whisk the eggs and sugar [as for a sponge]
Melt choc and butter
Add the choc and butter to the egg mix
Add the flour
bake 30 min 160 degree

I will try find a choc sauce recipe if you want

How about this one from Nigella? It might be a bit fancy for a child but you could always miss out the syrup and chocolate shavings.

I usually just do one cake rather than two sandwiched together. Generally you should cook it at a lower temperature for longer to make sure it cooks all the way through. Make sure you use a recipe with plenty of baking powder/bicarb of soda to make sure it rises nicely.

yay, good old MN, thank you for all these replies!

the fudge brownie recipe sounds divine but Mr Fussy may object to anything slightly different so I will just do my normal boring choc sponge with baking powder and cook for longer, lower.
