Does anyone have a good sausage casserole recipe please?

Preferably one that can be cooked in slow cooker and uses borlotti beans,.

You're lucky I already had this one written up for someone else, or I'd of probably forgotten half the ingredients :)

its a firm favourite around here

Sausage Casserole (Vegetarian & Meat version)

INGREDIENTS
1 pack of good herby sausages..............(Chopped into aprox 1" Chunks) (lincoln/cumberland) (I use Cauldron Vegetarian 1s, as we don't eat meat, but these are also, a healthy lower fat alternative for meat eaters ( & tasty too) (if not Herby, add 1/2 tsp of mixed herbs, Sage & Basil, are best but any mix, or Bouquet Garni will do

Little Olive Oil

Couple of Cloves of Garlic (if liked) (peeled & crushed) (or teaspoon of dried)

1 tsp basil

1 Large Red Onion...... (cut into chunks aprox 1")

1 red, 1 green, & 1 Yellow peppers........ (de-seed & cut into chunks aprox 1")

2 Small-Medium Courgettes........ (cut into aprox 1" chunks).

2 Glasses of Red Wine.

Jar (aprox 600g) Passata, (can be substituted with 2 tin of Tomatoes that have been liquidized)

1tsp of Fresh Ground Back Pepper (you can add more for an added kick)

METHOD
1.Brown Sausages & Chopped Peppers with Olive Oil & Garlic, in large pan over cooker,

  1. Add all other ingredients & Stir to evenly distribute, bring to boil & simmer for about 20 minutes
ITS NOW READY TO EAT

(alternatively this can be started on top of cooker, & transferred to a slow cooker, to be ready on return home from work)

Added Health Benefits.....
Cooked Tomatoes......good for keeping lactic acid moving in your muscles, so helping cramps etc (they dont feed tinned tomatoes to racing dogs for nothing)
Black Pepper.... good for warming your system & aching joints,
Red Wine...good for the heart & antioxidants
Garlic..., good for heart....blood pressure.....& cleansing blood etc

Serves well with New Potatoes or Mash & Broccoli (or Cabbage), or rice & with added lentils, add a bit more liquid (water is fine) to thin out, & serve with good chunky brown bread.

whoops - just spotted the borlotti beans,

you could get away with adding those if you wanted :)

Ooh I LOVE saus cass!

I make with pork or veggie sausages.

6 sausages, brown off in frying pan and cut into chunks. Remove. Fry a chopped onion in a bit of the fat. Put sausages back in with a tin of kidney beans and a tin of another kind e.g. Borlotti or flageolet. Add tin of tomatoes, good dollop of tomato purée and a bit of optional chilli powder. Cover over with cider and bring to boil. Simmer for a while. Works brilliantly in slow cooker too.

Serve with a jacket potato, something green, and some more cider!

Nb reduce liquid a lot for slow cooking. Boiled sausages are horrible. :o

Fry sausages in a casserole pan. Make sure they're browned. Add onions and carrots, parsnip and turnip if you want. Add borlotti beans and red lentils. Add veg stock. Cook until lentils tenter. Season to taste.

Lentils are lovely with sausages.

Rachel Allen does a lovely sausage and bean bake - i don't put in the cheese but its really easy and you can whatever type of beans you like in it - and it only takes 40 mins in the oven!
