If you're serving Greek salad at 7pm, could you make and refridgerate it at 2pm...

I'm asking because the guests come at 3, and we'll be eating at 7, and I'm wanting to get as much of the meal pre-prepared as possible...

You could make it but not dress it. The cucumbers tend to soak up a lot of the dressing and go soft if they are left to stand too long.

No I wouldn't. You could though-

slice the cucumbe. (put in little bowl)
slice the tomatoes (ditto)
cut up feta (in bowl)
boil eggs

and then assemble at the very last minute. I would never pre-prepare a salad, any salad really not just this one. They get all mushy.

Prepare it but add the dressing just before serving. Also, take it out of the fridge a good while before serving - fridge cold salads are yuck imo.

You could get it all ready in the bowl but just leave the cheese until last minute. It'll be delicious, I could just eat a large bowl now Grin

No eggs in a Greek salad. When I make it I use: tomatoes, cucumber, onion, olives and feta cheese.

I would prep all the ingredients, but keep them separate and mix them all together just before serving.

Never used eggs in a Greek salad either but do add chopped red peppers.I would only use red onions, never white ones.

Make the dressing and pour it over thinly sliced red onions and oregano a few hours in advance. Assemble everything else at last minute and at room temp.

The onions go soft and lovely.

I agree about dressing the onions. It also removes the harshness from them.
