Lots of left over roast beef - what to make for dinner tonight

Rarely have roast leftover but have lots leftover for dinner tonight. I'm shattered and have no inspiration. Any ideas?

Marinate in soy and fresh ginger, then stirfry with lots of fresh vegetables.

Stick it in a sandwich with watercress.

Thai beef salad. The only way to eat leftover beef. www.bbcgoodfood.com/ has lots of recipes.
