I need a chicken thigh recipe that takes 4 hours to cook (and 15 mins to prepare..)

We're going out this afternoon, it is wet and windy and I'd really really like to come home to a hearty casserole, especially as there'll be no time to cook anything proper between getting home and launching into the kids bedtime.. so if it isn't hearty casserole it'll be beans on toast.
any ideas hungrily welcomed Smile

Are they thigh fillets, in which case curry is good, or on the bone, in which case I'd do a coq au vin, or a spanish chicken casserole.

Do you have a slow cooker?

they're on the bone, so coq au vin sounds good.

We don't have a slow cooker, so it needs to be something that'll be good in the oven while we're out..

.. all the coq au vin recipes I've googled so far are pretty quick cooking, around an hour. BEcause we'll be out of the house, I don't want to be guessing oven temp, just turning it down and hoping it'll be ok Confused Have you got clear temp & time guidelines for me [hopeful face]
