I've been making Delia's mincemeat for the first time, I don;t want to make a christmas cake with left over ingredients I have, any suggestions as to what I could do with all this dried fruit? I havecandied peel also....

what about a fruit loaf (not as heavy as a xmas cake and can have it with custard or on its own) or fruit scones

Can also make little sort of samosas with dried fruit and filo pastry. I think Delia did them ages ago.

I make currant tarts.

Put a layer of warmed golden syrup on the bottom layer of pastry. Fill with currants, put a pastry lid on top. Glaze with milk and sprinkle with sugar.

Bung in oven about 180 degrees for about half an hour.

Delicious with vanilla icecream (or you can eat a slice cold).
