Does anyone have a no-fail recipe for ham? Not the Nigella cola one.

How do I do it without it drying up?

Boil then roast is best. I use my mum's recipe, once its boiled, take off the outer layer of fat and then carve in crisscross to the under layer of fat. Smear over a mustard/marmalade mix, poke a clove in each diamond and then roast.

Very Christmassy though.

I do boil then roast too - with treacle and mustard on.

I slow cooked mine in 250mls of cider (and enough cold water to cover it) with carrots, onion and bay leaf, thyme and celery for 5 hours.
Remove from cooker and thicken the remaining juice with flour mixed with softened butter.

I'm experimenting and trying to find something for Xmas. This is very good but I want to try one with some sort of brown sugar coating next.

I just thought the cola one was a bit tasteless. My family all raved about the Gordon one when I made it last year so I will definitely be making it again this year.
