There was a nice chicken thigh, bacon and leek pie on the Lorraine programme this morning. The recipe's probably on the itv website.

Onions, celery and carrots, white wine, chicken thighs de-boned, and thyme. Bobs your uncle, chicken stew! Ta da Smile

taffetacat · 02/11/2010 13:55

How about Jamie's 30 minute piri piri?

thatsnotmyGUNPOWDER · 02/11/2010 14:00

Rub on some harrisa paste, roast with red onions and lemons.

Once cooked, take out to rest, pour juices into a pan, add some chick peas, simmer for 10 mins, add some spinich and wilt. Serve with roasted onions and lemons. DELISH!

Put 'em in a roasting dish, pour in Hoi Sin sauce and a small carton of orange juice. Roast. Utterly yum.

We're having thighs tonight. I'm just going to shove them in a casserole dish with stock, red wine, lentils, tomatoes, onions, carrots, mushrooms and whatever else is in the bottom of the fridge and let it cook on low for a couple of hours (we don't eat until 7ish though) I don't bother deboning, after that amount of cooking the meat should just fall off!

scruffymuff · 02/11/2010 14:47

Put in a roasting tin with a sliced up lemon, a glug of olive oil and some rosemary or basil and roast for about 45 mins, or until cooked- serve with green beans and new potatoes.

My mum makes a lovely chicken dish which i do too. Brown your chicken and onions in a saucepan and remove to a casserole. Then add butter to pan and melt, add flour and chicken stock and mixed herbs........ stir to make a sauce and pour over chicken and onion. Cook till the thighs are done at a medium heat!!

ginodacampoismydh · 02/11/2010 17:11

taffetacat · 03/11/2010 13:36

shepherds pie today

Jux · 03/11/2010 15:47

Chicken soup. We've all got that cold that's awful for a day, goes away for a few days, comes back and is awful for a day or two etc.

Hoping home made chicken soup will have desirable effect.

JABnowJAR · 03/11/2010 16:14

We're having chicken thighs tonight with couscous, chickpeas, lemon & parsley. It's yummy! Grin
