Yummy cakes that can be made a day or two in advance

Do any clever mumsnetters please have any recipes for cakes/biscuits that will keep well if made say 2 days in advance of being eaten/still be good to sell on xmas fair cake stall?

I make cranberry and macadamia cookies each year and they keep a week or so. Ingreds a bit expensive for school fair though maybe.

Millionaires shortbread keeps well, and sells well. You could decorate chocolate top with some festive white choc stars or something before it hardens.

Brownies keep for a few days, longer in fridge.

You allowed to do stuff with nuts? Cakes with ground nuts keep and in fact improve with time. eg Almond and orange, pistachio etc.

Cake pops keep well - but need space in your fridge, and they take up a fair bit of space.

Cakes and biscuits with a high fat content keep well.

Brownies? You could add white chocolate or dust with icing sugar. This really is the best recipe

Nigella's damp lemon and almond cake - actually gets better if you leave it a day or two (as usual, go easier on the sugar than she does).

Nigellas Dense Chocolate Cake is definitely better after a day or two.

As others have mentioned, brownies are also better after a day or two

Dorset Apple cake i'hve made this cake loads time . keeps up to 3days easy to whip up in food processor. Google it .

Lemon drizzle cake keeps well, as it is moist anyway.

Rocky road lasts a while too, as long as you can keep your hands off!
