I love this, but am away at the moment, without my cookbook, so would really appreciate it if someone could help me out with the quantities please?

6 chicken pieces
1 tblsp olive oil
1 large onion
150g pancetta
2 cloves garlic
280g brown basmati rice
750ml chicken stock
Juice and zest of 1 1/2 lemons
2-3 bushy sprigs thyme
250g frozen broad beans

I love this too - might have it tomorrow now you've reminded me about it :)

what do you do - just stick it all in and cook? for how long?

dreaming - brown the chicken then remove. Fry the onion, garlic and pancetta. Add the rice and fry for a couple of mins. Then add the lemon, thyme and stock. Bring to the boil and add the chicken. Cook in oven for about an hour i think (going off memory here).

Oh, and we dont like broad beans, so no idea when they should go inWink

I can't find broad beans here (dubai) do you reckon frozen peas would be ok (if I added them a bit later) ?

i sometimes add peas in, about half way through the oven cooking timeSmile

Made it last night - was v.good.

No peas or broad beans in the house but had some asparagus that needed using so steamed that and had it on the side.

Only had one lemon, but it didn't suffer (although I have lemon thyme in the garden so used that rather than ordinary thyme). Other main variation is that I used a whole 200g pack of smoked lardons rather than 150g of pancetta.

Dp seemed to think it was OK, ds (10) loved it and had seconds.

I'm rather pleased as anything one pot that goes in the oven rather than having to be lovingly attended to on the stove is a winner - hence I do Silvana's Baked Spanish Risotto often.

How was it, btw? I'm making it again tonight - it's become a bit of a staple.

For future reference, should anyone fancy it, I tried to make it with chorizo instead of lardons/pancetta. It was rubbish Grin
