Need a recipe for muffins with pumpkin and sunflower seeds

and possibly carrot, orange, walnuts??

I can do you one for an energy bar type thing, quite flapjacky? has apple in it.

Melt 100g butter, 100g light muscavado sugar, 4tbsp of honey or golden syrup together, don't let boil. I another bowl, Mix 1 grated apple, 250g rolled porrige oats, 2tbsp sunflower seeds, 1 tbsp sesame seeds, 1 tbsp pumpkin seeds then stir in the butter mixture. (I also added a handful of raisins but that wasn't in the original recipe!)
Bake @ 180 for 25-30 mins in greased square/rectangular tin or until golden brown.

i don't fancy a muffin with seeds, tbh. flapjacks otoh... yum.

Yum sounds delicious. I would just use a standard carrot and orange muffin one like this and add some seeds to the top. If you add walnuts, you may need to up the liquid a bit.

I have a lovely granola recipe that includes pumpkin, sunflower seeds and orange zest plus nuts of choice.

i would tolerate seeds on the top, but wouldn't they be odd inside?

Flapjacks are a good idea and granola sounds really good. Have you got the recipe or link to the granola,taffeta? Thanks, lankyalto for that recipe too. I've have to put it to a family vote!

You need the pumpkin muffins recipe from Riverford. They're so moreish and even nicer when warmed up served with a swirl of cream. I'll see whether they've got an online recipe.

Its from an old Sainsbo's mag and then has been adapted by me many times, roughly thus:

  • tablespoon demerara sugar
  • about 30g butter
  • 2 tablespoons golden syrup or 1 each of g syrup and honey
  • 5 handfuls good quality porridge oats
  • your mix of the following ( I use a sprinkling of each )- pumpkin seeds, sunflower seeds, sesame seeds, chopped hazelnuts, chopped pecans, flaked almonds, desiccated coconut, chopped whole almonds
  • grated zest of an orange
  • few drops vanilla extract

Once cooked, can add:

  • few handfuls of your choice of golden sultanas, dried cranberries, dried chopped apricots, chopped dark chocolate

Oven around 150c. Line a roasting tin with baking parchment and put the butter, sugar, syrup/honey in the middle and melt in the oven for 5 mins. Swirl to mix.

Mix the other ingredients together well in a large bowl then mix in tin ensuring all coated in the butter/sugar/syrup mix. Try to get mix laid out in tin as flat as poss. Return to oven and turn it all every 10 minutes so nothing burns. Cook for about 25-30 mins. Leave to cool, then break up.

Add the other bits only once completely cold. Stores in airtight jar for aaaaages.
