Killer Quiche - give me your great ideas please!

Have folks coming over and want a lightish supper. Am long on eggs, so thinking a nice quiche with news and salad.

What is your favourite quiche recipe? I've made loads before, but they are a bit samey and fancy something different.

Please reply before 9pm - I have to finalise my shopping order!!

Beetroot - yes, really!

Saute onion till it goes soft and brown, add grated cooked beetroot, then spread in pastry case, add egg/cream mixture as normal, and some thyme. Bake as normal.

I did a lovely one a while ago with lots of (ready-steamed) leeks, and parmesan in the custard. Would be great with onions instead of leeks, and the odd anchovy across the top.

mixed peppers or good old quiche lorraine. smoked salmon and spinach is nice too. I love caramelised red onion but every time I do it the onions go blue for some reason. I've given up with it.

Curried courgette and currants! Basically add a good curry paste to the egg mix, toss in some currants and grated (salted / drained) courgette. I love, my book club loves it but I have to confess my family are not so keen.

notasize10yetbutoneday you need to add something a bit acidic like a splash of balsamic vinegar and onions will not look a strange blue hue. Same as with red cabbage.

Agree caramelised onion quiche, but intrigued by idea of beetroot - do you not get pink eggy bit?

This recipe for smoked salmon and dill tart is lovely; it has a phyllo crust which keeps it quite light-tasting despite the rich ingredients.
